Traditional methods
The harvest begins with hands, not machines. On September 25th, at a perfect 25 degrees Celsius, we picked olives at their peak. They were cold-pressed with, using only mechanical methods and no heat, preserving their purity. It takes up to ten kilos of olives to produce just one liter of our oil, while others need around 5 liters. This rare density captures the olive’s essence. The result is a golden elixir, full of character and alive with everything nature has to offer.
The Power of Polyphenols: Health Unleashed
Our olive oil holds over 450 mg/kg of polyphenols. These antioxidant compounds are nature’s defenders, known to reduce inflammation and support long-term well-being. We harvest early, when the olive is at its most potent. With just 5.7 meq O₂/kg of peroxides, the oil stays fresh and vibrant.

Old Native Trees
In our groves, ancient native trees stand quietly, rooted in time. These trees have adapted over generations, growing strong without the help of chemicals. Unlike industrial hybrids, they flourish naturally, sustained by a thriving ecosystem. We invite biodiversity to return. For every potential pest, there is a natural balance. Birds, insects, and wildflowers help keep the grove in harmony. No pesticides, no shortcuts. Just a living landscape, respected and protected.
