A WALK THROUGH THE GARDEN

 

As we cross the entrance to our garden, our five senses awaken.

We step into a magical environment where the beauty of our vegetables, medicinal and aromatic plants, trees, and flowers immerse us in a wonderful biodiversity of plants and animals.

It seems that silence reigns, yet if we sharpen our hearing, we can appreciate the chirping of the birds that live there, the buzzing of bees hovering among the flowers, the fluttering of butterflies, or the breeze caressing the corn.

Our sense of smell comes alive as we pass through our rose garden of ancient and edible flowers or stroll along pathways where vegetables mingle with aromatic plants, full of endless fragrances like basil, dill, mint, sage, or lavender.

The chance to touch the vegetables and discover each plant, with its different varieties, sizes, and shapes—and, of course, to taste them directly from the plant—evokes the ancient flavors and textures of our agriculture.

After this regenerative visit for body and soul, recharged with the energy and positivity that nature conveys, we are ready to try all these delicacies in their various forms in La Donaira’s kitchen.

Our La Donaira garden employs natural, ecological, biodynamic, and regenerative farming methods, free of agrochemicals and based on caring for and nurturing our soil, rotations, and associations, creating a biodiverse garden nourished by compost from our animals.

The seeds used are 100% organic and/or homegrown—seeds of ancient and native varieties alongside our own varieties—to expand the range of vegetables destined for our hotel kitchen.

In our greenhouse, we carefully nurture all our seeds, from germination to seedlings, ready for transplanting into the garden.

We grow only seasonal vegetables, which go directly from the garden to the kitchen—exclusive products that our chefs include in the menu: varieties of lettuces, carrots, cabbages, cauliflowers, turnips, or radishes that perform the miracle of exquisite, unique, flavorful, and healthy dishes.

The garden at La Donaira isn’t just a patch of soil—it’s a living canvas, painted with the cycles of nature and the care of those who tend it.
